COMMON PROBLEMS AND REASONS THAT CAN BE DISMISSED
BY USING ARTESANA PRE-MIXTURE’S SWEET LINE:
Problem: Uneven surface
the mix doesn’t extend evenly in
the baking tin;
- oven’s trays are not balanced;
- the baking tins are damaged.
Problem: there is a prick in the final product
insufficient shortening;
the mixture is too compact;
insufficient liquid;
excessive amount of flour;
- excessive air currents inside the oven.

Problem: lack of symmetry
excessive sugar quantity;
insufficient amount of eggs;
insufficient amount of flour;
excessive amount of baking soda;
- the oven is too cold;
- the baking time was not long enough.
Problem: low volume
the formula is unbalanced;
- the oven is too hot or too cold;
insufficient mixing time;
- mix quantity is insufficient for the size of the
baking tin.

Problem: Dark Crust
excessive amount of sugar or the solid
ingredients;
- the oven is too hot;
- there is excessive heat in the upper part.
Problem: White Crust
The formula is unbalanced;
- The oven is too cold.

Insufficient sugar or shortening quantities;
Excessive amount of flour;

Problem: sticky crust
Excessive amount of sugar;

The mix is too thick;
- The oven is too hot.
Problem: bad taste or smell
Low quality ingredients;

Ingredients not properly stored.
Problem: lack of taste or smell
Insufficient amount of salt;
Insufficient amount od essences;
Low quality ingredients.
Problem: undeveloped final product
Excessive amount of sugar, shortening and/or
liquid;
Excessive amount of baking soda;
Insufficient amount of baking soda;
- Insufficient amount of baking time.
Problem: overdeveloped final product
Over mixing;
Excessive amount of baking soda;
Excessive amount of shortening.
Problem: very large alveolus
Excessive amount of baking soda.
